Pork chop fried rice, prawn cakes & more by ex-Din Tai Fung chef in Bedok

Is it a rite of passage for Din Tai Fung chefs to eventually leave and start their own business? And it’s not just any business — it’s always signature pork chop fried rice. Well, I’m not complaining. It’s nice to have more options for DTF-style fried rice at wallet-friendly prices.

Bedok is one such hotspot, and the newest contender Ding Gua Gua is no stranger to the wok. Helmed by two experienced former DTF alumni (a chef and a manager), the hawker stall puts its own unique spin on classics served at the renowned chain restaurant.

Four types of fried rice

Four different types of fried rice grace the menu. Go for the DTF-style Signature Egg Fried Rice (S$4), or stray away from the brand with the Sambal Fried Rice (S$4.50), or DGG Egg Fried Rice (S$4.30). But the dish that has made its mark islandwide — the Signature Egg Fried Rice with Pork Chop (S$6.50) — is placed front and centre.

You can choose whichever fried rice you prefer and top it with the likes of Shrimp, Luncheon Meat, and Taiwanese Sausage. The DGG Taiwanese Sausage Fried Rice (S$5.80) comes highly recommended, with its smoky sweetness stealing the show for many.

Snacks reminiscent of DTF’s menu

If these snacks remind you of those on Din Tai Fung’s menu, you’re not wrong. The Handmade Crispy Prawn Cake (S$8) is a must-try, with limited portions available daily. Other offerings of the deep-fried variety include the Fried Dumpling (S$3.80) and Crispy Duck Roll (S$5). There’s also Spicy and Sour Soup (S$5), better known by its Chinese name suan la tang, which I know some can’t get enough of.
